Colombia Las Palmas Candy Blast
The process begins with a 48-hour anaerobic pre-fermentation, developing a foundation of complex flavours. After de-pulping, the beans are fermented for five days with dried and fresh watermelon, adding a refreshing sweetness and subtle hint of citrus. Sun-drying on patios and mechanical drying in silos are followed by a crucial 30-day stabilisation period. This process allows the complex flavours to meld, resulting in a balanced and distinctive coffee.
Tasting: A burst of Watermelon with Mint, Candy, Lemon, Bubblegum, Raspberry.
Guatemala El Boqueron
Produced in the Santa Rosa region, the 250 smallholder farmers who contribute to this Boqueron coffee have made a commitment to only harvest between December and February, which means that the crop is at its absolute peak ripeness.
Tasting: So what does this mean for you? Well, with this Guatemalan gem being carefully naturally dried and also being super ripe when picked, we are seeing some mind blowing notes of tropical fruit, cherry and strawberries.
Ethiopia Guji Uraga Wine Process
Another step forward in Ethiopia’s processing development, is this insanely unique coffee, processed with a modern natural wine process (or Carbonic Maceration).
Harvested in the Guji zone, this coffee is another example of the regions great quality coffee growing.
The Wine process is one of the more modern and experimental processes being practiced around the world. While the processing in essence is very similar to Anaerobic Fermenting, the natural wine process allows for a Co2 rich environment to encourage a different form of fermentation and development to take place.
Creating a carbon dioxide rich environment allows for different microbial activity for manipulate and further develop the flavours present within the coffee.
Tasting: This coffee is very fruit forward, packed with notes of Blackberry, Raspberry, Grape and Citrus.
