Collaborating with pioneers like Jhoan Vergara, he's mastered cutting-edge fermentation methods, including thermal shock and anaerobic processing, earning global acclaim among top roasters and baristas. His meticulous control over post-harvest processing consistently yields coffees known for their intensity, clarity, and stunning complexity.

The Allure of Ombligon

The Ombligon varietal itself is a rare and fascinating gem. Grown almost exclusively in Huila, Colombia, its name comes from its unique cherry shape, resembling a small belly button ("ombligo" in Spanish). This scarcity, combined with its exotic genetics, makes it a prized discovery for coffee enthusiasts.

Ombligon's flavour profile is remarkably bold yet elegant. Expect a harmonious blend of sweet cherry, creamy milk chocolate, and ripe berries, all unfolding with a silky body and a long, complex finish. Ombligon coffees consistently receive very high cupping scores from professional tasters and roasters, indicating their superior quality and complexity.  The varietal's unique characteristics and its excellent response to experimental processing have made it a favourite on the competition stage and a frequent winner of awards when meticulously cultivated and roasted.   Award wise, - there have been plenty:

Nestor himself was recognised int he 14th annual Sprudgie Awards (aka "the Oscars of Coffee" in the "Most Notable Producer" category.
