The art of the co-ferment
Every bean undergoes a rigorous journey to capture its "Juicy" essence. It begins with meticulous hand-sorting to ensure only the most pristine, ripe cherries make the cut. These cherries are tucked into plastic bags for a 24-hour pre-fermentation, followed by another 24 hours of whole-cherry fermentation to develop deep sugars.
The real magic happens after depulping: the beans are submerged in an anaerobic environment for 5 days. Here, the mucilage is co-fermented with specialized yeast and fruit to amplify the honey process, resulting in a significantly boosted fruit-forward cup quality.
