Grown in the volcanic soils of Tropical North Queensland and roasted in Ravenhall, West Melbourne, this lot showcases the potential of Australian‑grown specialty coffee in a light–medium filter profile.

Designed for V60, Kalita, batch brew and Aeropress, this roast brings out the clean, fruit‑forward character of the Catuai varietal while maintaining balance and sweetness.

Expect a bright, juicy cup with citrus, stonefruit and caramel sweetness. The light–medium filter roast enhances clarity and aromatics while keeping the acidity refined and structured.

Jack Murat is one of Australia’s most respected specialty coffee farms, known for precision agriculture, sustainable practices and meticulous processing. Their focus on soil health, selective picking and controlled fermentation results in coffees with exceptional clarity and character.

This lot is grown at altitude on rich volcanic soil, hand‑picked at peak ripeness and processed on‑site to maintain full traceability.

Anaerobic Natural Process

This lot undergoes a controlled 12‑day anaerobic fermentation, developing layered sweetness and soft acidity. After fermentation, the cherries are dried at a stable 35°C to preserve flavour integrity and ensure long‑term stability — a signature of Jack Murat’s meticulous processing.
