The Process: Anaerobic Perfection

The journey of the Gesha Oasis is designed to deepen its inherent complexity while preserving its delicate floral character:

  1. Anaerobic Fermentation: After depulping, the beans undergo a controlled 36-hour anaerobic fermentation in sealed GrainPro bags. This oxygen-free environment encourages the development of the more intricate and exotic flavour compounds.
  2. Meticulous Washing: The coffee is thoroughly washed to ensure a clean final cup, maintaining the bean's essential qualities.
  3. Slow, Even Drying: The beans are then dried for an intensive 20 days on raised canopies. This slow, even method is crucial to lock in the coffee’s vibrant and nuanced flavour profile.
  4. Stabilisation: A 30-day stabilisation period in GrainPro bags allows the intricate flavours to fully mature and balance, resulting in a harmonious and well-rounded cup.
