The Process: Anaerobic Perfection
The journey of the Gesha Oasis is designed to deepen its inherent complexity while preserving its delicate floral character:
- Anaerobic Fermentation: After depulping, the beans undergo a controlled 36-hour anaerobic fermentation in sealed GrainPro bags. This oxygen-free environment encourages the development of the more intricate and exotic flavour compounds.
- Meticulous Washing: The coffee is thoroughly washed to ensure a clean final cup, maintaining the bean's essential qualities.
- Slow, Even Drying: The beans are then dried for an intensive 20 days on raised canopies. This slow, even method is crucial to lock in the coffee’s vibrant and nuanced flavour profile.
- Stabilisation: A 30-day stabilisation period in GrainPro bags allows the intricate flavours to fully mature and balance, resulting in a harmonious and well-rounded cup.
