Discover one of the most refreshing and playful co‑fermented coffees from Colombian producer Jairo Arcila. Grown at Finca Santa Mónica and processed by the team at La Pradera, this lot showcases an innovative washed + watermelon co‑fermentation that creates a vibrant, fruit‑forward cup unlike any traditional washed coffee.

Coffee Tasing Profile: Undeniably Watermelon

Expect a lively, summer‑bright cup with:

Coffee Processing — Washed Watermelon Co‑Fermented

Only the ripest cherries were selected and transported in sealed tanks to preserve freshness. After floating to remove low‑density beans, the cherries underwent a 48‑hour dry anaerobic fermentation, during which fresh watermelon was added to the tanks. The watermelon adds its refreshing, juicy sweetness and a subtle fruitiness to the coffee.

Following fermentation, the watermelon coffee was pulped, washed, and dried for 10 days on raised beds, with all wastewater treated through an environmentally sustainable filtration system.
