This microlot’s signature sweetness and aromatic intensity come from a multi‑stage fermentation protocol designed to infuse the coffee with natural strawberry esters.
- Anaerobic Inoculation Hand‑picked Castillo cherries ferment in sealed tanks with fresh strawberries and wine yeast, creating a controlled environment for flavour development.
- Molecular Infusion The wine yeast acts as a catalyst, helping the beans absorb strawberry sugars and aromatics at a molecular level—ensuring the flavour remains vivid after roasting.

I was expecting more strawberry flavor from this one, but instead got a pungent wine note that was pretty intense. The puck even seemed wine-like. It was a bit too much for me, though I think some people would enjoy it. I’m giving it 4 stars since it did live up to the name “Strawberry Wine Yeast.” Tip: clean your grinder after using this, as it leaves a strong wine yeast smell (I’m not entirely sure what wine yeast smells like, but I assume that’s what it was).
