The cup opens with ripe blackberry and layered fruit notes, supported by a lively tartaric acidity that adds structure and brightness. The texture is juicy and refreshing, finishing with a clean, refined sweetness that highlights the precision of the Lanchea Thermotolerans fermentation.


Lost Origin: Brewing Science Meets Coffee Innovation

Lost Origin, led by Franz, Andy and Johnathan, brings brewing expertise from Casa Bruja, a craft brewhouse in Panama City. Their approach merges centuries‑old brewing traditions with exceptional cherries from Panama’s most respected producers.


Processing: Pulped Geisha with Lanchea Thermotolerans Fermentation

This exquisite Geisha from Chevas Estate (Boquete) underwent a meticulous fermentation protocol under the guidance of the Lost Origin team:

  • Cherries were pulped
  • Inoculated with Lanchea Thermotolerans starter culture
  • Fermented for 2 days at 20°C
  • Dried under humidity‑controlled conditions for 26 days
  • Finished at 11.2% relative humidity for stability and clarity

The result is a Geisha with amplified aromatics, refined sweetness and a clean, expressive structure.


Chevas Estate, Boquete

Chevas Estate sits in the highlands of Boquete, one of Panama’s most prized Geisha‑growing regions. Volcanic soil, cool misty microclimates and slow cherry maturation create ideal conditions for producing elegant, floral and fruit‑forward Geisha.

This lot is a perfect example — delicate, aromatic and beautifully balanced.
