This exceptional micro-lot from the New Kiriti Farmers Cooperative in Kenya’s Mathioya District is one of those rare coffees that is simply too good to pass up. It possesses all the iconic qualities of a world-class Kenyan coffee: bold, intense fruit flavours, an incredibly clean profile, and a crisp, bright finish. Grown at 1900 MASL, the Gondo factory ensures quality from start to finish, supporting over 730 members who are dedicated to the pinnacle of East African specialty coffee.
Filter Flavour Profile: Syrupy Plum, Tart Stone Fruit & Caramel
Roasted specifically to a Light profile, the Gondo is designed to be vibrant, clean, and incredibly refreshing. It offers a "high-definition" sensory experience that evolves beautifully as the cup cools:
- Palate: Vibrant Syrupy Plum and Tart Stone Fruit (think nectarine and blackcurrant).
- Sweetness: A foundation of smooth Caramel that balances the intense acidity.
- Finish: A crisp, sparkling finish that leaves the palate clean.
- Character: A tea-like, complex cup for those who value clarity and powerful fruit acids in their morning brew.
The Process: Pure Kananahu Stream Water
At the Gondo Wet Mill, precision is the standard. Every step is designed to preserve the "sparkling" quality of the terroir:
- Same-Day Processing: Handpicked cherries are delivered and sorted the same day to prevent uncontrolled fermentation.
- Washed with Precision: Using fresh, cold water from the nearby Kananahu stream, the cherries are de-pulped and washed to ensure a pristine profile.
- Sun-Drying: The parchment is sun-dried on African raised beds, allowing the flavours to stabilize under the high-altitude sun.
- Varietal Excellence: A blend of the legendary SL 28 and SL 34, alongside the resilient Ruiru 11 and Batian varietals.

Filter Brew Guide: Unlocking the Fruit Clarity
To capture the syrupy plum and tart stone fruit of this specialty filter coffee, we recommend the following pour-over recipe. As always, feel free to tweak the parameters to your specific equipment and taste:
- Dose: 19g (Medium Grind)
- Yield: 285ml (93°C–95°C Water)
- Time: 2:30 minutes
Roaster’s Tip: Kenyan coffees are dense and benefit from slightly higher brewing temperatures to fully extract the complex sugars. Use a clean paper filter and a steady, circular pour. If the finish feels a bit too "sharp," try a slightly coarser grind to highlight the tea-like elegance.
