The Story: Wilder Lazo — From Veterinary Science to Gesha Mastery
Wilder grew up on a coffee farm but originally trained and worked as a veterinarian. In 2017, inspired by his family’s coffee legacy, he returned to the San Adolfo mountains to assist his father — and quickly became captivated by the world of specialty coffee.
Driven by curiosity and supported by his background in genetics, Wilder built a varietal development program that now includes over a dozen rare and exotic varieties sourced from around the world. His scientific approach, paired with deep family heritage, has positioned Bella Alejandria as one of Colombia’s most exciting and progressive farms.
This gesha is a direct expression of Wilder’s precision, innovation and relentless pursuit of excellence.
The Process: Double Fermentation & Tangerine‑Infused Sun Exposure
This lot undergoes a highly controlled, multi‑stage process designed to enhance florals, citric complexity and sweetness:
1. Double Fermentation – 140 Hours
The gesha cherries are immersed in anaerobic mucilage for 140 hours, developing vibrant floral and citric notes.
2. Tangerine‑Infused Sun Exposure – 18 Days
The coffee is dried under the sun for 18 days, infused with tangerine peel to enhance zest, aromatics and complexity.
3. Stabilisation – 25 Days
A long 25‑day stabilisation period ensures flavour clarity, structure and longevity before milling.
This meticulous process results in a cup that is elegant, aromatic and unmistakably gesha.
