From the renowned El Vergel Estate in Fresno, Tolima, this filter roast highlights one of the most intensely fruity and expressive microlots crafted by farmers Elías and Shady Bayter. Grown in a plot surrounded by guava trees and positioned beside the estate’s washing station, this lot is celebrated for its vibrant fruit character, lifted aromatics and exceptional sweetness.
Hand‑selected Red and Yellow Caturra cherries are harvested at peak ripeness, then undergo a 48–60 hour anaerobic fermentation — a controlled oxygen‑free environment that builds layered complexity, bright acidity and pronounced tropical fruit notes. After fermentation, the cherries are dried slowly under the sun on raised beds in a Marquesina, then finished in low‑temperature mechanical dryers to achieve perfect moisture stability.
This meticulous natural anaerobic process produces a clean, expressive and fruit‑forward filter coffee with clarity, structure and a refreshing citrus lift.
