The Heights of Gedeb: A Masterclass in High-Altitude Terroir
Located in the "Southern Nations, Nationalities & Peoples" (SNNP) region, the Gedeb district has rapidly earned a reputation for producing some of the world’s most sought-after profiles. Grown at staggering altitudes of up to 2100 MASL, these heirloom varieties mature slowly under the canopy of native Zigba and Kererro trees, alongside food crops like Enset (false banana), potato and soybeans. This rich biodiversity contributes to the deep, layered complexity found in every cup.
The Process: 72-Hour Fermentation for Exceptional Clarity
Quality begins with meticulous hand-harvesting, followed by a rigorous washed process that defines the "clean" Ethiopian profile:
- Fermentation: After pulping, the beans are fermented for 48–72 hours, a crucial step that unlocks the coffee's vibrant acidity.
- Washing & Floating: Beans are washed with fresh water and floated to remove any minor defects, ensuring only the highest quality parchment remains.
- Traditional Drying: The final stage takes place on African raised beds, where the coffee is sun-dried for up to 16 days. This slow, steady moisture reduction locks in the complex fruit esters.

The Gedeb is a Grade 1 coffee, meticulously roasted to a Medium level to highlight its sparkling acidity while developing a luxurious texture. It is a vibrant, fruit-forward selection for any specialty coffee enthusiast:

- Time: 28–32 seconds
Roaster’s Tip: Because of the high altitude and dense beans, don't be afraid to push the extraction time. If the acidity feels too sharp, a slightly finer grind to hit that 32-second mark will pull out more of those creamy honey notes.
