A bright, fruit‑driven natural filter coffee from the highlands of Guji — expressive, clean and shaped by a family legacy that spans generations of Ethiopian coffee craftsmanship.
The Story: A Legacy Rebuilt Through Processing
Before 1974, Alemayehu (Gizaw’s father) produced exceptional coffees from his privately owned farms in Yirgacheffe. When the socialist government nationalised his land, the family’s farming future was taken from them overnight.
Rather than return to farming under harsh new policies, a young Gizaw chose a different path — coffee processing. With his wife, Frehiwot, he rebuilt the family’s connection to coffee through modern, quality‑focused processing, honouring his father’s vision in a new way.
Today, cherries from Dimtu, Harosema village are handpicked, sorted and delivered to Gizaw’s washing station, where meticulous natural processing brings out the clarity and fruit complexity that define this region.
Processing: Slow, Controlled & Precision‑Focused
- Handpicked cherries from Dimtu, Harosema
- Density‑channel sorting for clean separation
- Shaded drying between 12–3 p.m. to protect delicate fruit notes
- Frequent turning for even, consistent drying
- 20–28 days on African raised beds until reaching 11.5% moisture
This slow natural process enhances brightness, tropical aromatics and a clean, structured finish — ideal for filter brewing.

Filter Brew Guide
To capture the ripe peach and tropical clarity of this specialty filter coffee, we recommend the following pour-over recipe. As always, feel free to tweak the parameters to your specific equipment and taste:
- Dose: 18g (Medium-Coarse Grind)
- Yield: 270ml (90°C–93°C Water)
- Time: 2:30 minutes
Roaster’s Tip: Use a high-quality paper filter and ensure a gentle pour to keep the bed flat. If the peach notes feel too faint, try a slightly finer grind to increase extraction.
