Grown at staggering altitudes of up to 2300 MASL, this 74112 JARC variety is a masterclass in Ethiopian terroir. Surrounding the village of Harowacho, the high-altitude climate and the crossing Seboba River create a slow-maturation environment that locks in the complex sugars and vibrant acids we look for in a world-class espresso coffee
Espresso Flavour Profile: Yellow Nectarine, Orange Marmalade & Florals
While the Chebega is celebrated for its delicate aromatics, our Medium Roast is specifically developed to translate those floral notes into a syrupy, balanced espresso:
- Yellow Nectarine: A bright, stone-fruit acidity that provides a crisp and refreshing opening.
- Orange Marmalade: A deep, citrus sweetness that creates a syrupy and balanced mid-palate.
- Citrus Florals: An elegant, jasmine-like finish that lingers long after the final sip.
- Mouthfeel: A Smooth Body that provides a polished and sophisticated texture in both black and milk-based drinks.
The Art of the African Raised Bed Process
To achieve this level of clarity, the natural processing is executed with surgical precision at the Tebe Melge washing station, overseen by Bisrat Melaku.
- Density Sorting: Cherries are hand-picked by a team of 400–500 pickers and sorted by density to ensure only the most flavour-dense fruit is used.
- Sun-Dried Perfection: The cherries are meticulously dried on African raised beds for 14–16 days. This traditional method allows for optimal airflow and temperature control, protecting the beans from over-fermentation and locking in a pristine 11% moisture content.
- Varietal Purity: This lot features the 74112 JARC variety, a selection famous for its intense floral profile and citrus-driven acidity.

This specific varietal is famous for its floral intensity. For the best results, start with these parameters and tweak to your specific machine and taste:
- Dose: 22.5g
- Yield: 40ml
- Time: 27–31 seconds
Roaster’s Tip: If the acidity feels too "sharp" on your home setup, try increasing your yield slightly (e.g., a 1:2.2 ratio, pulling 48ml-50ml) to stretch out those marmalade sugars and soften the finish.
