From the renowned El Vergel Estate in Fresno, Tolima, this espresso showcases one of the most intensely fruity and expressive microlots produced by farmers Elías and Shady Bayter. Grown in a plot surrounded by guava trees and located beside the estate’s washing station, this lot has become famous for its bold fruit character and exceptional sweetness.
Hand‑selected Red and Yellow Caturra cherries are harvested at peak ripeness before undergoing a 48–60 hour anaerobic fermentation, a controlled oxygen‑free process that builds deep complexity and vibrant fruit intensity. After fermentation, the cherries are dried slowly under the sun on raised beds in a Marquesina, then finished in low‑temperature mechanical dryers to achieve perfect moisture stability. This meticulous natural anaerobic method creates a syrupy, expressive espresso with remarkable clarity and structure.
