Processing: Honey + Grape Co‑Ferment
This lot showcases El Vergel’s innovative approach to flavour development:
- Hand‑sorted cherries to remove defects and select only ripe fruit
- 24‑hour pre‑fermentation in plastic bags
- 24 hours of fermentation in cherry
- Depulping, followed by
- 5‑day anaerobic co‑fermentation with mucilage, yeast and grape flavours
- Mechanical drying for 10 days for even moisture
- 5‑day stabilisation in GrainPro bags
The result: a vibrant, fruit‑driven cup with notes of grape, caramel, chocolate, brown sugar and warm spice — a true showcase of Colombia’s diverse terroirs and experimental processing.
EA Sugarcane Decaf – Natural, Clean & Flavour‑Preserving
This chemical‑free decaf process ensures the coffee retains its full aroma and sweetness:
- Arrival & Pre‑Treatment: Green beans arrive at the Descafecol plant in Manizales, where they’re steamed to remove silverskin and open the pores.
- Moistening: Beans are hydrated with high‑mountain spring water under precise temperature control.
- Caffeine Extraction: Beans are submerged in natural ethyl acetate derived from sugarcane, which selectively removes caffeine.
- Flavour Preservation: Low pressure and gentle temperatures protect the beans’ natural sugars and aromatics.
- Finishing: Beans are steamed to remove EA residue, dried in cooling silos and polished with plant‑based wax.
The result is a 99% caffeine‑free coffee that tastes remarkably like its fully caffeinated counterpart.
The Story Behind the Coffee
This coffee is cultivated by farming families across Tolima, Huila and Caldas, with cherries sourced seasonally for peak freshness before being transported to El Vergel Estate.
