This coffee is a testament to the cutting-edge work coming out of Colombia and is a spectacular example of a complex, vibrant filter coffee.
The Process: Crafting the Intensity
This coffee is the result of focused innovation by Elias and Shady Bayter at the renowned El Vergel Estate run by our partner Forest Coffee in Tolima, Colombia. The "Punch" comes from a meticulous, high-impact processing method:
- Extended Pre-Fermentation: The journey begins with a 12-hour pre-fermentation in plastic tanks to kickstart the fruity flavour development.
- Anaerobic Fermentation: The Pink Borbón cherries then undergo a concentrated 24-hour anaerobic fermentation in sealed plastic tanks. The oxygen-free environment is crucial for enhancing the deeper, more complex fruit notes.
- Two-Stage Drying: The cherries are first placed in a mechanical silo for 4 days to reduce moisture efficiently, followed by an extensive 20 days of sun-drying on raised beds to ensure optimal flavor preservation and consistency.
- Stabilisation: A final 30-day rest in GrainPro bags allows the intense flavors to fully harmonize, delivering a remarkably well-rounded final cup.
