The distinct flavour and aroma are the result of the family's signature fruit maceration technique, which utilizes the exotic Lulo fruit (also known as Naranjilla, or "little orange") to create a cup that is both tantalisingly sweet and crisp.
The Innovation: 72‑Hour Lulo & Wine Yeast Infusion
This microlot’s explosive citrus profile comes from a meticulously controlled fermentation designed to infuse the beans with the essence of fresh Lulo fruit.
- Anaerobic Maceration (72 Hours) Hand‑picked Castillo cherries ferment in sealed tanks with fresh macerated Lulo fruit and specialised wine yeast, creating a clean, vibrant fermentation environment.
- Molecular Citrus Infusion The Lulo transfers its tart‑sweet esters—somewhere between lime, pineapple, and green mango—directly into the beans. Wine yeast amplifies clarity and complexity.
- Honey Process After fermentation, the cherries are pulped but dried with their mucilage intact. This adds caramelised sweetness that balances the Lulo’s sharp acidity.
- Raised‑Bed Drying The coffee is dried slowly on raised beds to lock in the “little orange” aromatics and maintain structure and sweetness.

Roasted as a Medium‑Light Omni‑Roast, this coffee is bright, syrupy, and deeply expressive.

Brew Guide: Dialling in the Lulo Vibrancy
The Jairo Arcila Lulo lot is highly soluble and incredibly aromatic. While versatile, it shines brightest when brewed to highlight its citrus complexity:
Espresso (Highly Recommended)
- Dose: 23g
- Yield: 45ml
- Time: 29–33 seconds

Roaster’s Tip: As a short black, this is extraordinary—bright, sweet, and complex.
With milk, the Lulo and caramelised apple notes create a flavour reminiscent of a gourmet fruit tart with a chocolate base.
Filter (V60 / Chemex / Batch Brew)
- Dose: 19g (Medium-Fine grind)
- Yield: 280ml
- Time: 3:00 minutes
- Roaster’s Tip: Brew at 92°C to let the delicate “little orange” aromatics open up without overshadowing the dark‑chocolate depth.

This one is extremely well produced.
The fruit works so well with the great beans.
Maybe it's actually the best not to be able to immediately picture a fruit when drinking co fermented coffee. I never ate lulo, so I could enjoy this one without having to be reminded that there is a flavour mixed with coffee.
The fruit and acidity blends in with cocoa.
A great coffee and if.you only want to try one, this shows very well what co fermented tastes.
(Min. i still have a couple to try. And I do think that some flavours don't blend well with coffee beans. I didn't enjoy watermelon flavour with coffee. But that's another product. Lulo cofermented coffee is excellent)
