This coffee’s electric, fruit‑driven profile is created through a meticulously controlled fermentation protocol:
- 48‑Hour Anaerobic Fruit Infusion 100% Castillo cherries ferment in sealed tanks with fresh green apples, allowing the beans to absorb malic acid and fruity esters at a molecular level.
- Pristine Washing After infusion, the beans are carefully washed to maintain clarity and a clean, polished finish.
