The Crown Jewel of Colombia: Finca Cerro Azul
Colombia Geisha Coffee from the world‑renowned Café Granja La Esperanza is widely considered one of the finest coffees on the planet. Produced at the prestigious Finca Cerro Azul in Trujillo, Valle del Cauca, this lot benefits from a unique micro‑climate and volcanic soil that allow the Geisha varietal to reach its full genetic potential. Owned by third‑generation producers Rigoberto and Luis Herrera, Cerro Azul is the most celebrated of their estates, dedicated exclusively to the mastery of Geisha production.
Filter Flavour Profile: Jasmine, Stone Fruit & Bergamot
As a Triple-A Grade Geisha, this coffee delivers an incredibly complex and tea-like clarity. Our light roasting profile ensures that the delicate floral aromatics and refined acidity are preserved for a world-class filter experience:
- Palate: Layered Mangosteen, Purple Grape, and Mandarin.
- Body: A rich, syrupy texture featuring Marmalade and Dark Chocolate.
- Mouthfeel: Balanced by a refined, nutty Almond Milk smoothness.
- Finish: A long, elegant Red Wine finish.
- Aromatics: An inviting bouquet of Rockmelon, Wild Honey, and a distinct Boozy Sweetness.
The Café Granja La Esperanza 95-Step Protocol
Situated in the Colombian Western Mountain range at 1650–2000 MASL, Finca Cerro Azul benefits from a unique environment where Pacific sunshine meets cooling mountain fog. Perfect for a Colombia Geisha Coffee. This microlot is the result of nearly a century of family heritage and a decade of experimental processing.
- 95-Step Quality Protocol: This coffee has cleared 95 strict quality hurdles to ensure it meets the highest specialty standards in the world.
- Selective Harvesting: Pickers are paid by the day rather than by weight. This encourages the harvest of only the most flawless, ripest cherries, prioritising cup quality over yield.
- Natural Anaerobic Process: The cherries undergo a controlled fermentation in an oxygen-free environment, amplifying the "purple fruit" complexity and creating that signature boozy sweetness.
