El Vergel Estate Caramel is a honey‑processed, caramel‑co‑fermented coffee crafted by Elías and Shady Bayter — a duo known for pushing flavour development to new heights. Expect a cup that is sweetly caramelised, lifted by bright citric acidity and finished with clean citrus clarity.

Process & Flavour Development
This coffee begins with hand‑picked cherries grown across Colombia’s high‑altitude regions, selected at peak ripeness and delivered to El Vergel Estate. The cherries undergo a 24‑hour pre‑fermentation in cherry, then move into hermetic tanks for 96 hours of anaerobic co‑fermentation with caramel. This controlled environment intensifies sweetness, enhances aromatic depth and preserves the coffee’s natural clarity.
After fermentation, the coffee is mechanically dried for 3–4 days, then stabilised for 30 days in GrainPro to allow the flavours to harmonise and mature. The result is a cup that balances indulgent caramel sweetness with refreshing citrus brightness.

El Vergel Estate’s journey began in 1995 with avocado farming, later shifting to coffee as the Bayter family sought new opportunities. By 2017, they were pioneering experimental processing to bridge the gap between growers and roasters. This vision led to the creation of Forest Coffee in 2019 — now a thriving network of 250 farming families focused on innovation, sustainability and transparent trade.
