Introducing the Colombia Chiroso de San Carlos, a limited microlot that represents the peak of innovation and community partnership. This is not just coffee; it's a testament to progress, featuring the highly prized Chiroso variety—a bean renowned for its floral and citrus-forward profile.
This inaugural harvest, scored as high as 88.75 SCA points, is the result of a dedicated project bringing together 10 small, hardworking family farms in the Penderisco River valley of Urrao, Colombia. By focusing on advanced processing techniques and direct trade, this coffee delivers an intensely vibrant, layered, and polished cup.
The Story: People and Progress
The Chiroso de San Carlos Project is driven by education and empowerment. Most farms in Urrao are small (around 1.5 hectares) and rely on family labor. Through the direct partnership of Forest Coffee, these producers have mastered modern Washed, Natural, and Honey processing methods, allowing them to dramatically improve quality.
This commitment to quality ensures a traceable, exceptional product and, most importantly, allows farmers to earn up to 30% more than through traditional sales channels. By purchasing this coffee, you are directly supporting the future and economic growth of the Urrao coffee community, one high-scoring cup at a time.
The Process
The Chiroso variety's inherent sweetness and complexity are magnified by a meticulous anaerobic fermentation process. After a short aerobic pre-fermentation, the coffee rests in sealed tanks for 36 hours. This controlled environment refines the coffee’s acidity and deepens its flavour structure.
Following fermentation, the coffee is sun-dried for up to 16 days, preserving the vibrant citric acidity and sugary sweetness that define this spectacular microlot.
