The Secret: Jairo Arcila’s Cinnamon Co‑Ferment

Unlike traditional “flavoured” coffees, this blend gets its cinnamon character from the fermentation process itself—long before roasting.

  • Anaerobic Infusion At Santa Mónica farm in Quindío, hand‑picked cherries undergo a dry anaerobic fermentation. During this stage, dried cinnamon sticks are added directly into the tanks.
  • Biological Bonding As the cherries ferment, the beans absorb natural cinnamic acids and essential oils from the bark, creating a deep, authentic spice profile.
  • A Natural Harmony The result is a seamless integration of cinnamon with the chocolate and caramel tones of the roast—warm, aromatic, and beautifully balanced.

This blend is designed to be versatile, but it truly excels when brewed to highlight its aromatic spice.

Roaster’s Tip: With milk, the cinnamon softens into a flavour reminiscent of a churro or warm cinnamon donut—pure comfort.
