Sun‑Drying on Raised Beds

The parchment dries for 2–3 weeks until it reaches the ideal 11–12% moisture content, ensuring stability and longevity.

To capture the rose water aromatics and creamy caramel body of this specialty coffee, we recommend starting with these parameters. As always, feel free to tweak the recipe to your specific machine and taste:

  • Dose: 22g
  • Yield: 45ml
  • Time: 28–32 seconds

Roaster’s Tip: The high altitude of Kayanza creates very dense beans. If the orange blossom notes feel a bit muted, try aiming for the upper end of the time range (32 seconds) to ensure you’ve fully extracted the complex sugars.
