This coffee is carefully crafted with cherries supplied by more than 350 smallholder farmers living in Dikitu. At the Gizaw washing station, each cherry is expertly handpicked and sorted to provide consistent quality. The cherries are then processed through a 36-72 hour fermentation, washed and floated for defects before being dried to the optimal moisture content.
