This Ethiopian varietal was grown in Colombia by the Lasso family, renowned for their experimental processing and fermentation methods. The El Diviso farm harvests just once a year from October to December. The farm was founded in 1997 by Joe Lasso who is joined today in farm management and production by his three sons, Jonathon, Adrian, and Nestor. The family is actively working to introduce the latest manufacturing methods and has become known for experimentation with fermentation, oxidation, and re-application of mucilage juices to the cherry during processing. All coffee is handpicked at its most ripe, then naturally dried under controlled conditions to ensure durability and preserve quality.
The Huila growing region is celebrated for its distinctly delicate cup profile that features bright acidity, sweetness, and a fragrant aroma. This offering is both delicate and substantial. Incredibly versatile from pour over to espresso.
