Decaf has come a long way. For years, coffee drinkers associated decaf with flat, muted flavours — and honestly, they weren’t wrong. Traditional decaffeination methods relied on chemical solvents that stripped away not just caffeine, but the delicate aromatics and flavour compounds that make coffee taste like coffee.

A Quick History Lesson

Decaffeinated coffee first appeared in 1903, and for decades most methods used solvents to remove caffeine. The problem? Those solvents often removed flavour too.

The challenge has always been the same: How do you remove caffeine without removing the soul of the coffee?

The answer arrived in the 1930s in Switzerland — a water‑based method that would eventually become the patented Swiss Water® Process, now operated in British Columbia, Canada.


The Swiss Water Process: Decaf Done Right

The Swiss Water Process removes 99.9% of caffeine using only:

  • Pure water
  • Temperature
  • Time
  • A clever bit of chemistry

No chemicals. No solvents. No compromise.

Here’s how it works:


1. Start with Green Coffee Extract (GCE)

Swiss Water begins by creating a solution called Green Coffee Extract — water that’s already saturated with the soluble flavour compounds found in coffee (but without caffeine).

This is the magic trick.

Because the water is already full of flavour compounds, the beans won’t lose theirs.


2. Beans Go In, Caffeine Comes Out

When green coffee beans are submerged in the GCE, something clever happens:

  • The flavour compounds stay in the beans (because the water is already saturated).
  • Only the caffeine migrates out of the beans into the GCE.

This keeps the coffee’s origin character, aroma and sweetness intact.


3. Carbon Filters Capture the Caffeine

Once the GCE absorbs caffeine, it’s run through a carbon filtration system that traps the caffeine molecules.

The refreshed GCE — still full of flavour compounds — is then reused.

The beans go back in. The caffeine comes back out. The flavour stays put.

This cycle continues for 8–10 hours until the beans are 99.9% caffeine‑free.


4. Dry, Bag, Roast — Ready to Enjoy

Once decaffeinated, the beans are dried, bagged and shipped to roasters like us. From there, we roast them just like any other specialty coffee — because they are specialty coffee.
